Burgers with Grilled Veggies and Fresh Mozzarella with Roasted Tomato Mayonnaise

Mayonnaise
 1 tomato, quartered
 5 ml (1 tsp.) steak spice
 5 ml (1 tsp.) dried oregano
 250 ml (1 cup) mayonnaise
Burgers
 1 pepper, seeded and quartered
 1 small eggplant, in rounds
 1 onion, quartered
 1 zucchini, sliced
 800 g ground veal, in 4 meatballs
 4 slices of fresh mozzarella
 4 ciabatta (or burger) buns
 Choice of toppings

Oven temperature: 180/350

Preheat the BBQ.

Place the tomato wedges on a baking sheet covered with parchment paper and sprinkle them with steak spice. Cook in the middle of the oven for 15 minutes.

Once the tomatoes have cooled, chop them and mix them with the mayonnaise and oregano. Set aside.

Cook the vegetables on the BBQ over medium heat.

Cook the veal meatballs for about 4 minutes on each side and place a slice of mozzarella on each meatball.

Spread the roasted tomato mayonnaise over the buns, add the meatballs and top with grilled vegetables and other toppings.
